Belen and I spent a quiet evening at home last night for the 4th of July. I felt like firing up the grill but didn't want to thaw out the thousand pounds of frozen Costco meat in our fridge so we made hot dogs. This weekend I'm scouring my favorite food magazines (Reiman publications- "Taste of Home", "Quick Cooking") for microwave recipes I can compile into a notebook for my son to take to college. Pizza disaster

I love pizza and I love cooking my own. Recently, I started making something more healthy. I use a flatbread with pizza sauce, add spinach, precooked chicken, basil, goat cheese and Laury's seasoning. Bake at 375 for 6 minutes and you have a calorie perfect dinner. I have a hard time when I go to New Orleans, because I am a vegetarian. Vegetarianism is not as readily accepted there as it is here and it is next-to-impossible sometimes to find good, healthy vegetarian fare in that city that isn't fried or simply cheese or salad. post 4th

Favorite Things-Soybeans

So far I have two controversial food items on my favorites list. Managing My Lunch Time

Before my current job, I worked as a community youth program manager at a major California museum. Part of the program day entailed serving lunch to over 40 kids. Happy 4th!

Here in my hometown we celebrate more than the 4th of July. We bill ourselves as the "Huckleberry Capital of the World". Huckleberries are similar to blueberries only smaller and they grow wild here in this part of Oklahoma. So- happy 4th and have some huckleberries- or blueberries if you must- to whet your appetite.

Fourth of July Cheese

Every few months it seems I'm replacing the damn power supply for my Powerbook. Yeah, it's old but it's what I've got and there's no money to replace it. Favorite Things-Peanut Butter

I love peanut butter. As a kid, one of my favorite snacks was peanut butter and apple, preferably Granny Smith apples. Somethings don’t change. Now I just use peanut butter in more things, like my morning oatmeal, shakes and as a delicious spicy thai sauce over noodles.

Lemon Thyme Dip

1½ cups sour cream
1 tbsp. chopped fresh or 1 tsp dried thyme leaves
1 tbsp grated lemon peel
2 tbsp lemon juice
½ tsp. salt
veggies for dipping

Mix all ingredients except vegetables in a bowl.

Went grocery shopping yesterday.

While Kelley was here, I noticed a lot of cultural differences in our food choices. Things that she takes for granted are things I never eat....milk, eggs, meat. ick. Favorite things-Oats

It may seem a little weird, but I love oats. Not the sloppy, goopy kind that comes prepackaged, straight from a grocery store shelf where you just add water to make a bowl of snot. I prefer steel cut oats. I know it takes a little more time to cook in the morning, but it’s worth the extra time and effort. And you can also soak them overnight to cut down on the cooking time. Baseball and Big Macs

At nine years of age, I was a huge baseball fan. I bought pack after pack of baseball cards, read player autobiographies, and begged to go to as many Dodger games as I could (which was at most one per season).

So when McDonalds started a new Baseball Trivia promotion, I was there. They had a scratch-off card with a single trivia question and four choices. Get the right answer on the first try and you win a Big Mac. While I didn't get every single question correct, I nailed most of them…

FD #2

Having dinner early is doubleplusgood than having dinner at some ungodly hour (for me last week, it was 11pm right after calculus class).

The best taco dip you'll ever have! This is my signature dish I am now stuck bring this dip to every family and friend function where we are asked to bring a dish to share. Apple Pizza

Sugar cookie dough crust – pre-baked and cooled
3 tb Flour
1 pk 8oz cream cheese softened
1/4 c Creamy peanut butter
1/2 c Brown sugar 1/2 ts Vanilla
2 md Granny smith apples
1 c Lemon lime soda
Cinnamon
1/4 c Caramel ice cream topping
Optional: 1/2 c Chopped peanuts


Blend cream cheese, peanut butter, brown sugar,and vanilla together until smooth.

Spread on cooled cookie.

Peel, core and slice apples.
