I don't work anymore because of health problems. It seems as though employers are reluctant to have an employee who has a number of sick days every month. Go figure. :D
I not only knit, I do quilting, crochet, embroidery, and a number of other crafty things. When I have a project I keep it in a basket or bag beside "my" chair. Then I pull it out and work on it while I watch tv. This has the added advantage of keeping my hands busy so that they aren't continually putting food in my mouth. My biggest problem right now is not feeling well enough to tackle anything that might have to be done over later. I tend to make mistakes when I'm not feeling well. I'm coming out of a bad time right now and starting to feel much better. Just in time to make some things for Christmas. Good timing! I have many unfinished projects - I just have to decide which to tackle first.
I knit just once a week with my ladies. We go to a coffee shop and spend about 2 hours. I don't get a lot done, but it is for recreation. Heck, I'm gonna go for coffee anyway!
I am lucky enough to be able to take a bus to work, so I knit in the bus on the way to and from work, usually. Sometimes I've knit on my lunch break, if I actually get one. And sometimes, work just gets in the way. But I am pretty much knitting when I am able (like while watching TV and so on).

During the school year, I manage to always have a class that has a lot of group presentations. So, while the whole class gets bent out of shape because presentations are running over time, I am overjoyed for the extra knitting time. I would really like to find a meetup group that doesn't meet during my class time so I can meet people and have a set knitting time.
HA. I was just looking through old blog posts to find pictures of socks I knit last year, and I realized how long it's been since I actually finished a project and it just made me sad ... this year my job is keeping me WAY too busy to knit as much as I want to. Sorry not to have any answers for you ... why can't people realize that keeping knitters sane is more important than job productivity?
