Inspired, Super-Easy Weeknight Meals

I would love to get a few people sharing some of their super-easy recipes that they love to throw together on a week night. You know the ones - they taste amazing, like you've spent hours in the kitchen, but really you threw it together in 10 - that's what I'm looking for. Anybody want to share?

I got this recipe from Everyday Food magazine which I love but when I fell in love with it didn't realize that it was from Martha Stewart - and I'm glad I didn't because it probably would have stopped me from looking at the magazine first if I'd known.

Roasted Salmon with Spicy Cauliflower

Pre-heat oven to 450 degrees.

Ingredients:
1 head of cauliflower
2-3 cloves of garlic
2-3 Tbsp anchovy paste (or you could use anchovy's, we don't but you totally could)
1/2 tsp red pepper flakes
3 Tbsp olive oil
salt and pepper

and of course, 2 salmon fillets - or however many you want to cook. This recipe works for the two of us, though admittedly it is a big and filling meal. But also good for you, don't forget the wondering omega 3s you'll be getting here!

- Cut the cauliflower in large florets. Wash/Rinse and let drain.
- Grate or mince the garlic
- Mix remaining ingredients (excluding salmon) and garlic in a bowl, making a loose paste
- Put cauliflower in a large bowl, pour paste over it, and toss several times to coat
- Place on baking sheet and put in pre-heated oven for 10 minutes
- Take out of oven, turn and move cauliflower to edge of baking sheet, and place salmon fillets in middle of sheet
- Season salmon fillets with salt and pepper and place 2 lemon slices on each (optional - you know, in case you don't like flavour!)
- Put in oven for 8-10 minutes or until salmon is cooked to your liking

And that's it. After that it's cooked and ready to eat. It really is very simple, and de-lici-o-cious!

Kielbasa turkey sausage
Zuchinni
Yellow or red peppers
Olive Oil
Garlic Salt
Brown Rice

In a large pan, coat the bottom with olive oil. Slice the turkey sauage and vegetables, add to the pan. Add garlic salt and cover. Stir occasionally until vegetables are done. Add more garlic salt to taste. Serve over brown rice.

The turkey sausage is half the calories and fat of regular beef sausage and I cannot tell the difference. It's a very tasty meal.

I make a recipe I found in a magasine in France years ago which is a fantastic side dish to go with pan fried chicken / pork ... thrown together and forgotten in the oven.

Patatas a la pobre

7 fl oz olive oil
3 onions
2 large red peppers
2 large green peppers
1 kg waxy potatoes
3 cloves garlic
2 bay leaves
1 large thyme sprig
salt and pepper
2 tbsps chopped flat leaf parsley

oven at gas mark 4

onions into a heavy bottomed frying pan until soft
then garlic
then peppers
finally pots, s&p, bay and thyme

whole pan in oven until potatoes are soft. Sprinkle with parsley to serve.

A beautiful recipe from Alice Waters:
salmon cut 1" thick (pull out bones with tweezers)
2 celery stalks sliced thin
2 carrots sliced thin
1/2 yellow onion sliced thin
3 sprigs thyme
1 large sprig parsely
water to cover salmon

Bring all ingredients (except salmon) to a simmer in a heavy duty pot, cover, and simmer 20 minutes. In the meantime, prepare herbed butter:
1/2 stick butter, room temp
1 small shallot finely diced
large pinch of chopped chives
zest from 1/4 lemon
pinch of salt and pepper
Combine in a small bowl and set aside.

Taste the simmering bouillon and adjust seasoning to taste. Slip the salmon into the broth. The broth should cover the salmon but if it doesn't, that's okay, just flip salmon halfway through cooking. Cook salmon to desired temp (I like it slightly undercooked in the center). Transfer salmon to soup bowls and put a dollop of herb butter on each. Pour bouillon over the butter and salmon and add some of the vegetables.

Wonderful cold weather recipe that seems so chic but is really very simple...
