Vegetarian Crock Pot Recipes

My family and I have been vegetarians for a million years (we will eat dairy products). I just recently bought a crock pot (slow cooker) and am looking for main dish/entree recipes that anyone might have. My family consists of me, my DH, our thirteen year old daughter (Elle) and our Ten year old son (Ten). Help!

I have a cook book called The Vegetarian Slow Cooker by Joanna White. I haven't had a chance to make many recipes out of it yet, but maybe I'll try one out this week.

Did you see my chili recipe? We had it for dinner the other night. Even my 3-year-old will eat it.

I'd like to know how you like the recipes in The Vegetarian Slow Cooker.

I have Fresh From the Vegetarian Slow Cooker by Robin Robertson. I've tried several of the recipes and have liked them all. There are lots of good soup, stew, chili and casserole recipes. One of my favorites is the Slow-Fashioned Pot Pie with Biscuit Crust. It's basically just veggies (pre-sauteed onions and carrots, raw diced potato, chickpeas, frozen peas, and whatever else you want to throw in) with a little vegetable stock, tamari, dried thyme and savory, and salt & pepper cooked on low for about 5 hours. You then drop spoonfuls of biscuit dough on top and cook on high for an hour.

Katie - That recipe for the Slow-Fashioned Pot Pie with Biscuit Crust sounds absolutely yummy. It's 10pm here and now I'm hungry. lol

Katie: I just posted about this book below. I love that pot-pie recipe! I love it so much, I may have to go shopping for the ingredients to make it very, very soon!

I know I've adaped it somehow (I think I doubled some ingredients). I adapt every recipe I come across for my household's tastes. When I remember how I did it, I'll try to stop back.

Thanks, Soy is the New Black, for this group. I'm so excited about this whole NaBloPoMo thing, I don't even know how to describe my enthusiasm! the number of exclamation marks I am leaving around here might be a clue.

I own Fresh from the Vegetarian Slow Cooker by Robin Robertson. I have tried several recipes from it, most of them successful. A couple (the Wild Rice Risotto, for one) have even become staples in my house.

Also, I just posted an adapted slow cooker recipe and posted in on my site, Red Pen Mama. Try it out! It is popular with veggies and non-veggies alike. Even my almost three-year-old likes it!
